Description
Still white wine from the hills of the Belice Valley in Sicily, 12.5% ABV, produced by Orestiadi. A blend of Chardonnay and Viognier, 2023 vintage. A blend that combines the richness of Chardonnay with the complexity of Viognier, with a unique bouquet ranging from exotic fruit to broom, passing through Sicilian citrus. Aged for 10-12 months on the fine lees with daily batonnage. Fresh, balanced, enveloping, harmonious, and savory on the palate.

| Wine making | Harvesting of the Chardonnay and Viognier grapes took place in mid to late August, in the very early morning hours, so that the grapes arrived in the cellar intact and not stressed by the high temperatures of the day. The musts were subjected to cryo-maceration at 4 °C for four to six hours, after which the grapes were softly pressed and transferred to settling tanks, where clarification took place. In March, Chardonnay and Viognier were blended, when the winemaker felt they were ready to combine and definitively create the Paxmentis Bianco blend. |
