Pommard Noizons is a still red wine by Nicolas Rossignol, an authentic expression of Pommard in Burgundy. Made from Pinot Noir grapes, it displays an intense, dark ruby colour. The bouquet offers aromas of small black fruits, which develop into notes of game, pepper and leather. On the palate, it reveals a full body, managing to combine delicacy and vigour. The sip is enveloping, characterised by dense and robust tannins, and finishes with a persistent aftertaste, ideal for pairing with red meats and mature cheeses.
Where it comes from
This red originates in the Beaune area, in the heart of Burgundy. The vines benefit from optimal southern exposure and take root in deep, intensely red soil, typical of the Pommard area. This particular terroir gives the Pinot Noir a pronounced concentration, balancing the freshness of the fruit with a robust flavour profile. The characteristics of the soil shape a structured profile, ensuring the wine has remarkable longevity, with an estimated ageing potential of between ten and fifteen years.
How it is produced
Nicolas Rossignol cultivates his vineyards in Beaune following a strict organic and sustainable approach. The vines, aged between fifteen and seventy-five years, ensure high quality and great balance. To fully appreciate this structured red, it is recommended to decant it for about an hour before tasting. The ideal serving temperature is between 18 and 20°C, a condition that allows the dense and deep tannins to express all their elegance in the glass.

The vines sink their roots into the intensely red soil of Pommard, delivering in the glass the purest and most elegant identity of Burgundy.

In 1997 he created his Domaine with only 3 hectares, which after the merger in 2011 between D.ne Nicolas Rossignol and the family Rossignol-Jeanniard become 17 and on which Nicolas vinifies about 30 different appellations.
In 2016 the construction of the new winery in Beaune began, which will allow the talented "vigneron" to express even better his great ability to interpret Pinot Nero from the "small" Bourgogne to the smallest facets of the Volnay passing through the Pommards: wines fine, elegant extraordinary examples of Pinot Noir in Côte de Beaune.
