Where it comes from
The roots of this wine go back to the Savennières area, within a historic vineyard where the first vines were planted by Cistercian monks around 1130. For nearly nine centuries, this agricultural site has ensured uninterrupted harvests, maintaining its original vocation. The cultivation of Chenin Blanc follows strict organic and sustainable practices, favouring the Guyot training system. The schist soils are the key element for the development of the wine's tension on the palate, while the limited yield of the vines allows for particularly concentrated grapes, capable of conveying the pure essence of the place in the glass.
How it is produced
The production process in the cellar follows an essential approach, aimed at preserving the purity of the raw material. Vinification begins with a gentle pressing of the bunches, a fundamental technique for obtaining a clear and stable must. Fermentation starts spontaneously thanks to indigenous yeasts, without any external intervention that could alter the aromatic characteristics. The process then continues with eight months of ageing on fine lees in used oak barrels, a choice that promotes structural harmony and roundness without marking the aromatic profile with intrusive woody notes.

All around the castle there are still ancient vestiges of Celtic, Roman and Carolingian civilizations. The production is divided into three different lines: the Coulée de Serrant (AOC Coulée de Serrant) located on the steep hill overlooking the Loire, a small vineyard of only 7 hectares from which about 25,000 bottles are produced per year; the Vieux clos (AOC Savennières), smaller, from which 8/10 thousand bottles are produced; the Clos de la Bergerie (AOC La Roche aux Moines) capable of producing 15 thousand bottles.
