Where does it come from
Moser's vineyards stretch between Maso Warth and the slopes of the Cembra Valley, at an altitude between 350 and 650 metres. This cool climate encourages a pronounced aromatic precision. The pergola and Guyot training systems support the ripening of the Chardonnay, whose roots delve into calcareous soils in the valley and porphyritic soils at higher altitudes. This geological combination gives the wine remarkable savoury tension and a solid structure.
How is it produced
After a careful manual harvest of the Chardonnay, gentle whole-bunch pressing allows only the delicate free-run must to be extracted. Fermentation and resting take place in temperature-controlled stainless steel tanks to preserve the varietal freshness. Following the Traditional Method, the secondary fermentation in the bottle precedes a very long ageing on the lees for one hundred and thirty-two months. This slow maturation shapes the wine's character, refining the texture of the bubbles and enriching the palate with complex tertiary aromas.
