Morella Old Vines Primitivo is a still red wine made from Primitivo grapes, an authentic expression of Salento. Its powerful character is the result of a long maturation of fourteen months in Allier oak barrels, followed by at least eighteen months of bottle ageing. This process defines a full and concentrated style. On the nose, it releases dense aromas of black cherry and spirit-soaked plum, enriched by notes of tobacco and caramel. On the palate, it confirms a firm structure, standing out for its enveloping fruitiness that offers a deep and persistent sip, the result of a production choice without filtration.
Where it comes from
This wine originates in the Manduria area, in the heart of Apulia, from vineyards managed according to biodynamic principles and manual labour. The vines are ancient bush-trained Primitivo, over seventy-five years old, dry-farmed to ensure a high concentration of grapes. The roots delve into a well-drained calcareous subsoil, enriched by the typical Apulian red earth, a crucial element that imparts maturity, intensity, and a firm gustatory hold. Production focuses exclusively on the most historic and representative plots of Morella, chosen for their marked typicity.
How it is produced
Manual harvesting ensures yields limited to just thirty-five quintals per hectare. Fermentation in small vats takes place at a controlled temperature with manual punch-downs, followed by very gentle pressing using a traditional press. Maturation continues in Allier oak barrels for fourteen months, followed by a further eighteen months of bottle ageing to maximise structure and depth. To preserve the integrity of the Primitivo profile, bottling is carried out without filtration.
