Yacochuya is a still red wine made from Malbec grapes with a hint of Cabernet Sauvignon, crafted by Michel Rolland. Where does it come from
This blend originates in Argentina, in the heart of the Cafayate Valley. The old vines grow at altitudes approaching two thousand metres, rooted in predominantly clay-silica and gravel-silica soils. The mountainous environment ensures a climate characterised by intense sunlight and marked nocturnal temperature variations. This environmental dynamic guarantees complete ripening, intensifying both the colour and the aromatic spectrum. Such characteristics of the terroir impart a natural structural tension to the wine, reflecting the identity of the Andean highlands.
How is it produced
The process begins with a manual night harvest and a meticulous double selection to protect the bunches from the heat. Fermentation takes place in small stainless steel vats at controlled temperatures, thus preserving the purity of the fruit. Subsequently, malolactic fermentation and an eighteen-month rest occur in new French oak barrels. This process gives the wine an intense aromatic profile, characterised by notes of strawberry, raspberry, dried violet and spices. The elegant maturation in barrels smooths the texture, enriching the body with deep nuances without overshadowing the freshness.
