Ariò by Mastroberardino is an organic extra virgin olive oil crafted solely from the indigenous Ravece cultivar in Irpinia, Campania. It boasts a brilliant green colour with golden glints and a characteristic unfiltered appearance. The nose reveals a medium-intense grassy bouquet, featuring distinct notes of tomato leaf, artichoke, and sage. On the palate, it is velvety and enveloping, underpinned by a pleasant savouriness, while the finish offers a vibrant balance of bitterness and peppery spice, providing a clean, precise profile that enhances high-end cuisine.
Geographical origin
The olives are grown on the Mirabella Eclano estate in the heart of Irpinia, within a specialised, organically managed grove. Situated at around 400 metres above sea level with a south-westerly exposure, this site helps maintain crisp vegetal aromas. The volcanic tuff soil, rich in minerals with a silty-loam texture, directly shapes the oil’s character. These unique geological conditions foster the oil’s distinct savoury note, anchoring its herbaceous expression firmly in the local terroir.
Production process
Production starts with a manual harvest at the veraison stage, followed by immediate milling to preserve the fruit’s integrity. The olives are crushed using a traditional stone mill before cold pressing, a gentle method that maintains sharp aromatic definition. The oil then undergoes natural decantation without filtration, keeping its authentic, textured appearance. This meticulous process ensures a stable oil that captures the true essence of the Ravece olive, making it a superb match for grilled oily fish and hearty vegetable soups.
