Where it comes from
This passito originates from Gargagnago di Valpolicella, in the heart of the Veneto region that produces Recioto della Valpolicella Classico, an area renowned for its native varieties. The wine is produced by Masi, a historic estate in Sant’Ambrogio di Valpolicella. The hillside exposure encourages the development of an intense and complex aromatic profile, giving the wine a balanced structure and an extraordinary capacity for long ageing.
How it is produced
The production process is based on the appassimento technique. The selected bunches rest for about three months on bamboo racks in naturally ventilated drying rooms, allowing the concentration of sugars and aromas. Afterwards, the grapes are destemmed and gently pressed to start fermentation. The wine matures for twenty-five months in oak barrels, a crucial stage that defines its structure, before completing the process with a further three months’ rest to harmonise its deep gustatory persistence.
