In the basement, the base wines make the first alcoholic fermentation in temperature-controlled steel tanks, followed by malolactic fermentation in view of the assembly with reserve wines of the previous two vintages. Then the second fermentation is started in the bottle where the wine rests on yeasts for 36 months. Natural manure is used as a fertilizer in the vineyard; Use only copper and sulfur as a phytopharm. |
