What kind of wine it is
Champagne Mandois Brut Origine is created from a meticulous blend of grapes including Chardonnay, Pinot Noir and Pinot Meunier. Crafted using the Traditional Method, essential for developing a fine and persistent perlage, it displays a golden yellow colour. On the nose, it offers aromas of ripe fruit, lime, fresh plum, white flowers and brioche. On the palate, it is dry and rounded, enriched by hints of lightly toasted honey, salted caramel and candied citron. The finish is dry and elegantly balanced.
Where it comes from
This wine originates from the surroundings of Pierry, a historic village near Épernay. The Mandois vineyards span renowned terroirs along the Côte d’Épernay, the Côte des Blancs, the Côte de Sézanne and the Côte des Bar. Among these stands the Clos Mandois, a prized walled vineyard home to mature vines. The agricultural approach is fully respectful of the ecosystem, employing organic farming methods to encourage pure varietal expression and capture the authentic essence of these celebrated slopes.
How it is produced
The grapes, hand-harvested, ferment spontaneously thanks to the action of indigenous yeasts. Vinification takes place mainly in stainless steel, while some parcels of Pinot Meunier mature in oak barrels to enhance aromatic depth. After malolactic fermentation and the addition of reserve wines, the wine undergoes secondary fermentation in the bottle. A prolonged ageing on the lees in historic cellars imparts great complexity. Finally, the low sugar dosage defines the dry and assertive character typical of the Brut style.
