After the manual harvest, the grapes undergo gentle pressing and a brief cryomaceration. Fermentation takes place in French oak barrels at a controlled temperature, excluding malolactic fermentation to preserve freshness. Ageing continues on fine lees with bâtonnage, followed by a period in stainless steel. Maturation concludes with a careful final rest.
