The sip finishes with a long finale featuring goudron tones, making it ideal to pair with cuts of beef, game, and mature cheeses.
Where it comes from
This wine originates from vineyards located in the municipalities of Barolo, Monforte d’Alba, and Verduno, combining grapes from prestigious plots such as Monvigliero, Terlo, Cannubi, and Bussia. The characteristic marl-limestone soils of the area provide the ideal environment for cultivating Nebbiolo. The vines, trained using the Guyot system, benefit from optimal south and south-east exposure. The agronomic management aims to enhance a pronounced tannic profile, ensuring the wine has extraordinary longevity and a complex structure.
How it is produced
Alcoholic fermentation takes place in glass-lined cement vats at a controlled temperature. Afterwards, the must undergoes post-fermentation maceration, with racking after about 22-25 days. Malolactic fermentation is carefully managed to soften the tannic component. Ageing continues for 30 months in oak barrels, allowing the wine to evolve slowly. The process concludes with an appropriate rest in the bottle, a fundamental step to achieve perfect gustatory balance.

The company owns 11 estates in the best positions in Dogliani and Barolo.
