Where it comes from
The grapes are grown in a context of heroic viticulture on the steep slopes of Aymavilles and Saint-Nicolas, cultivated by Les Cretes. The vineyards stretch at an altitude between 650 and 800 metres, enjoying excellent western exposure that favours perfect ripening of the bunches. The nature of the moraine-origin soils, loose and sandy, imparts the wine with its characteristic savouriness. In this extreme environment, the Guyot-trained vines benefit from strong temperature variations, defining the distinctive flavour profile typical of the Alpine terroir.
How it is produced
The grapes are hand-harvested at full ripeness, followed by overnight refrigeration to preserve the delicate aromatic precursors of Pinot Grigio. The whole bunches are gently pressed, with fermentation taking place in stainless steel tanks at controlled temperature for fifteen days. The wine then matures on the lees for nine months through daily bâtonnage, a technique that gives structure and roundness to the palate while maintaining lively freshness. The entire production process follows strict organic and sustainable farming practices.
