How it is produced
The production process begins with an eight-day maceration in wooden vats, designed to carefully extract colour and structure. After malolactic fermentation, a long maturation of thirty months in small barrels allows the tannins to soften, defining a complex gustatory architecture. The wine then completes its journey with six months of rest, ensuring a profile of good body and dryness, perfectly consistent with the minimal residual sugar present.
