Where it comes from
This wine originates between Mango and Castagnole delle Lanze, in a renowned area of Piedmont. The vineyards are situated at three hundred metres above sea level with optimal southern exposure. The marl-limestone soils, with a sandy tendency, give the wine a clear savoury tension and a distinctive aromatic finesse. This microclimate allows the freshness of the fruit to be preserved, masterfully balancing the sugar density resulting from the drying process.
How it is produced
Production begins with a slightly late harvest, followed by the drying of the grapes in the cellar to concentrate sugars and aromas. Alcoholic and malolactic fermentation take place in new French oak barrels, where the wine matures for ninety-six months, before finishing with a brief period in the bottle. This long maturation shapes a deep bouquet of dried apricot, candied orange, honey and rosemary, with a persistence reminiscent of tobacco.
