Where it comes from
This wine originates from the Bionzo vineyard in Costigliole d’Asti, among the hills of Monferrato. The rows cover five hectares at an altitude between 250 and 300 metres, enjoying optimal southern exposure. The vines, trained using the Guyot method, have a high average age, with some specimens over seventy years old. The continental climate, marked by significant temperature variations, promotes the balance of the grapes. The soils, composed of calcareous-clay marl and sedimentary rocks, give the sip depth and a clear mineral imprint in the long, clean finish.
How it is produced
Vinification begins with a careful selection of the grape bunches. Maceration and alcoholic fermentation take place in rotofermenters at controlled temperature for about fifteen days. The wine undergoes malolactic fermentation in wood, before a long maturation in French oak barrels lasting sixteen to eighteen months. After a period in steel tanks, the process concludes with bottle ageing. Bottling without filtration allows the aromatic complexity and authentic territorial character to remain intact.
