The vineyard is managed using the spurred cordon training system, with a density of five thousand plants per hectare and carefully calibrated yields, creating optimal conditions to express the local biodiversity and the identity of the terroir in the glass.
How it is produced
The manual harvest takes place between September and October, with careful selection of the grapes to preserve the integrity of the fruit. In the winery, a respectful approach is favoured: after immediate maceration, the musts undergo fermentation in stainless steel at a controlled temperature, followed by static cold stabilisation. The wine then matures for ten months in barrels, a crucial stage for enriching the tannic structure before a final period of rest, which defines its stability and final elegance.

The Acquagiusta vineyards cover thirty hectares, divided into two vineyards: we chose to position our vineyards by studying the exposure of the plants to the elements, in order to recreate the ideal conditions of water, soil, sun and wind and to exploit the strong character of the soil.
We want our wines to be pure and sincere: this is why we work with the utmost respect for natural processes, intervening as little as necessary. In this way, we enhance the grapes, keep the characteristics of the territory intact and create an authentic product.
Our work is based on tradition and experimentation. While rooted in Tuscan winemaking tradition, our style is constantly evolving: only by making the most of the fruits of the earth can we produce a wine that embodies its spirit and character. Read more
