The production process begins with a manual harvest, followed by gentle pressing to extract a clear must. Alcoholic fermentation takes place in French oak barrels, imparting volume and complexity without overshadowing the freshness of the fruit. Maturation continues for eighteen months in the same barrels, using half new wood, and is accompanied by regular bâtonnage on the fine lees. This technique gives the wine a deep creaminess, while maintaining clear structural definition and vibrant flavour tension.
