Where it comes from
This red originates in Beaujolais, within the renowned Fleurie area. Jean Foillard cultivates old vines with a respectful approach, excluding the use of herbicides and synthetic pesticides. This method allows the soil to impart its unique characteristics to the fruit, ensuring an authentic territorial expression. The result is a wine capable of evolving magnificently over time, demonstrating an ageing potential that can reach up to fifteen years.
How it is produced
The production follows a philosophy of minimal intervention. The process begins with a late harvest and a rigorous selection of the healthiest bunches. To preserve the integrity of the must, there is no chaptalisation and no filtration. After a one-hour decanting, it pairs excellently with white and red meats, pork, lamb, as well as rich platters of cured meats and mature cheeses.
