What kind of wine it is
J. Hofstatter Cabernet expresses the mountain identity of Alto Adige. Created through a careful blend of Cabernet Sauvignon and Cabernet Franc, this wine displays a deep, brilliant ruby colour. The bouquet offers enveloping mature vegetal notes, hints of black fruits and subtle spicy nuances. On the palate, it boasts a dense, earthy texture, supported by well-present and mature tannins that lead a vigorous sip. It pairs ideally with rich roast red meats, game, and mature cheeses.
Where it comes from
The grapes grow in the area of Termeno on the Wine Road, in vineyards situated between plateaus and slopes reaching up to eight hundred metres in altitude. The mountain microclimate, refreshed by breezes and constantly sunny, combines with the typical clay and mineral soils of the area. This natural synergy ensures a slow and complete ripening of the bunches, promoting the structural richness and clear territorial expression that define the character of the wine.
How it is produced
After destemming and crushing, vinification takes place in stainless steel tanks, with maceration on the skins for about ten days at a controlled temperature. The increase in temperature at the end of fermentation encourages the extraction of colour and aromatic components. A subsequent period of maturation, also in steel, preserves the freshness and integrity of the fruit. We suggest an hour of decanting to fully appreciate its evolving profile and long, vigorous finish.
