Inama's Soave Classico Carbonare is an elegant white wine from Veneto with a controlled designation of origin that precisely interprets the characteristics of Garganega in the Soave Classico territory. On the nose, it offers a taut and vertical profile, defined by citrus notes, yellow flowers, white peach, and a characteristic hint of flint. On the palate, the vibrant acidity blends with an enveloping texture, closing with a savoury finish, which is persistent and markedly mineral. Fermented and aged in stainless steel, it has a firm structure that makes it ideal for pairing with raw seafood, oysters, creamed salt cod, and spicy Asian dishes.
Where it comes from
The grapes come from the renowned Carbonare Vineyards, a historic plot located in a small Veronese valley where forty-year-old vines are grown using the traditional pergola system. The rows, situated at an altitude of 250 metres with an eastern exposure, rest on deep volcanic soils composed of dark basalt, which imparts a strong mineral character to each sip. The microclimate, cooled by currents from the Val d’Alpone and the nearby Little Dolomites, ensures slow and optimal ripening, preserving the freshness and aromatic balance of the clusters.
How it is produced
Production begins with manual harvesting following organic farming principles. The destemmed clusters undergo a brief skin maceration to delicately extract varietal aromas. After soft pressing, fermentation takes place in stainless steel tanks to keep the purity of the fruit intact. The wine then matures for twelve months on the fine lees with regular bâtonnage, a practice that gives volume and smoothness to the palate. A final ageing period perfects its balance, ensuring expressive purity and a clear gustatory persistence.
