Where does it come from
The grapes for this Tuscan Red come from organically managed vineyards located between the provinces of Florence and Siena. The Il Palagio estate stretches across the hills of Figline Valdarno, in a highly esteemed wine-growing area south of Florence. Thanks to this privileged terroir, the wine acquires a juicy character and a versatility that makes it ideal for pairing with a wide range of dishes. In addition to rustic fare and grilled meats, it pairs beautifully with hearty first courses such as lasagne and risotto. Its smoothness also successfully enhances flavourful cured meats, rich pizzas, and boards of mature and blue cheeses.
How is it produced
Vinification begins with temperature-controlled fermentation in stainless steel vats, carried out with the help of indigenous yeasts. Maceration on the skins lasts about a week, allowing for optimal extraction of colour and aromas. Afterwards, the wine matures for twelve months in French oak barrels: a crucial step in defining the tannic structure without overpowering the natural fruity notes of the blend. To fully appreciate its depth and organoleptic qualities, a preliminary one-hour decanting and a serving temperature between fourteen and eighteen degrees are recommended.
