Previous generations have always chosen to rely on a cooperative for the entire process of wine production, since Guillaume's entry into the company, the wine-making process has been carried out within the company, producing a limited quantity every year, but always in slight growth. None new wood is used during processing so as not to alter the character of the wine.
Les Pres Dieu is the first cuvée made by Guillaume and worked in two wooden barrels. The production is only 615 bottles. The dosage of 4.5 g/l has been established; this allows the freshness of the sandy terroir of Vrigny to be maintained and the slight oxidation to be balanced. which gives this cuvée its complexity.
