This Extra Brut Champagne by Paul Gosset, crafted using the Traditional Method, is born from a harmonious blend of Pinot Noir, Chardonnay and Pinot Meunier. In the glass, it displays a straw yellow colour, enhanced by a fine perlage. The bouquet offers fragrant fruity aromas intertwined with pastry notes. On the palate, it is fresh and savoury, with marked persistence. Characterised by excellent ageing potential, it is estimated to last between five and ten years.
Where does it come from
The grapes for this sparkling wine come from the commune of Mareuil-sur-Aÿ, in the heart of the Champagne region. The estate is run by Paul and Michael Gosset, heirs to a winemaking tradition dating back to the sixteenth century. The company manages three and a half hectares of vineyards, applying the principles of organic and sustainable agriculture. Work in the vineyard aims to preserve the natural ecosystem, reflecting the characteristics of the terroir through a dry and precise flavour profile.
How is it produced
Vinification follows the Traditional Method, with secondary fermentation in the bottle followed by a period of rest. The wine undergoes ten months of ageing on the lees, an essential step that defines the finesse of the perlage and aromatic complexity. The Extra Brut dosage enhances a taut and linear drink. Best served at a temperature between 6 and 8°C, this Champagne pairs perfectly with fish dishes, cheeses and seafood tartare.
