What kind of wine it is

Rosa Pastello Brut is a sparkling rosé wine produced in Veneto by Gabe, the result of a blend of Manzoni Bianco and Raboso Piave grapes. On the nose, it reveals an elegant bouquet with notes of lychee, mango, papaya, pear and peach, enriched by hints of violet and red rose. On the palate, it displays a fine and persistent perlage and a creamy mousse. The sip is intense and smooth, finishing with a long and savoury finish, slightly spiced. Excellent as an aperitif wine, it pairs beautifully with lean fish, cheese, Asian cuisine and gourmet pizza.

Where it comes from

This wine originates from Crevada di San Pietro di Feletto, in the heart of the Conegliano Valdobbiadene area. The vineyards are situated at one hundred metres above sea level on deep alluvial soil rich in clay, an essential factor in imparting savouriness and a clear definition of fruit. The project expresses a strong connection with Trevigiana viticulture and the renowned hills of Cartizze. The temperate climate of this area promotes balanced ripening of the grapes, ensuring a fresh aromatic profile, ideal for sparkling wine production.

How it is produced

After harvesting, the grapes undergo a low-temperature maceration for twenty-four hours and gentle pressing. The must settles naturally before fermenting at a controlled temperature. The prise de mousse follows the Charmat Method in a pressurised tank, a technique that preserves clean aromas and fine bubbles. Before being released on the market, the production cycle concludes with a brief maturation in the bottle in an upright position, which is essential for optimally stabilising all the taste components.
