Where it comes from
This wine expression originates from the vineyards in the Pomino area, in Rufina. The vines grow at mountain altitudes, immersed in a cool and breezy climate that encourages the slow ripening of the grapes. The roots delve into brown, well-drained soils, composed of fine elements on sandy-marl substrates with moderate acidity and good depth. This particular environmental setting defines the wine's character, ensuring a clear aromatic profile that reflects the natural vocation of a territory historically dedicated to quality viticulture.
How it is produced
The production process begins with a careful manual harvest of the grapes. Fermentation takes place at a controlled temperature in truncated conical oak vats, where regular punch-downs are carried out to achieve a balanced polyphenolic extraction during the thirteen days of skin maceration. Subsequently, the wine undergoes malolactic fermentation and matures for fifteen months in French oak barrels, integrating smoothness and complexity. A further period of rest completes the process, refining the structural cohesion of the sip.

The castle dates back to the 1500s and is well-known for its excellent location. However, the most significant testimony dates back to 1716, when Grand Duke Cosimo III de' Medici identified the four most suitable territories in Tuscany for producing Quality Wines.
The document, considered the forerunner of modern DOCs, lists the Pomino land along with Chianti, Carmignano and Val d'Arno di Sopra.
Since that date, the wines of Castello Pomino have won many awards: they were awarded in 1873 at the Universal Exhibition in Vienna and in 1878 won the Gold Medal at the Paris Expo, the highest international recognition at the time.
