On the nose, the Champagne reveals aromas of linden, jasmine, peach and citrus, which evolve into elegant notes of dried apple and candied orange. On the palate, it stands out for its creamy mousse and lively acidity, offering a soft sip with no added sugar dosage. The persistence is long and culminates in an enveloping finish, enriched by delicate caramel notes.
Where does it come from
This wine originates from Baslieux-sous-Châtillon, a highly esteemed area within Champagne. The vines sink their roots into clay-limestone soils characterised by flint and millstone, elements that give the wine particular tension and fullness. Franck Pascal manages the vineyards following biodynamic principles, protecting biodiversity and avoiding the use of pesticides. Low yields and manual harvesting ensure intact grapes, capable of reflecting their terroir of origin with great purity.
How is it produced
After manual harvesting, the grapes undergo a natural vinification process aimed at enhancing the integrity of the fruit. The secondary fermentation takes place in the bottle according to the Traditional Method. The base wine is partially matured in oak barrels, a practice that imparts structure and roundness while preserving the original freshness.
