Where it comes from
The origin of this oil is firmly rooted in Tuscany, in the heart of Chianti Classico. The olives ripen in the Fontodi olive groves, managed entirely according to the principles of organic farming. The trees are cultivated with a density of 400 specimens per hectare, guaranteeing each tree the ideal space for harmonious development. The polyconic vase training system structures the canopy, favouring optimal sun exposure. This precise agronomic setup is fundamental for allowing accurate manual harvesting, an indispensable step for selecting only the fruits at the perfect stage of ripeness.
How it is produced
The entire production process aims to minimise the time between harvesting and milling. The freshly picked olives undergo mechanical pressing very quickly. This timeliness is crucial for fully preserving the vegetable fragrance and the nutritional properties of the fruit. Careful extraction guarantees the maintenance of the original aromatic profile, resulting in a product with consistent organoleptic characteristics. The result is an oil capable of expressing a defined freshness, which faithfully reflects the peculiarities of the Chianti Classico land.

Fontodi is a certified organic farm and covers 170 hectares, of which more than 80 are planted with vines. The principles of naturalness and sustainability inspire the agriculture that is practised: not only are no synthetic chemical products used, but an attempt is made to make the most of the company's internal resources by reducing external inputs. For example, the vineyards are fertilised using compost produced by combining pruning residues and manure from the farm's own Chianina breeding.
