Description
What kind of olive oil is this?
The Fonterutoli Chianti Classico Olio Extra Vergine d’Oliva from Castello di Fonterutoli is a refined extra virgin olive oil crafted from a blend of Frantoio, Leccino, Moraiolo, and Pendolino olives. Its vibrant light green hue introduces a precise herbal sensory profile with clear notes of green tomato and pistachio. The palate reveals a pronounced artichoke character, leading to an elegant and controlled peppery finish that perfectly balances its intense flavours.
Where it comes from
Produced in the heart of Tuscany, this oil originates from the Chianti Classico area. The high-altitude olive groves are situated between 400 and 600 metres above sea level, a pristine hillside setting that naturally enhances the fruit’s fresh aromatic complexity and controlled pungency. Under the guidance of the historic Mazzei family, who have shaped the agricultural identity of the region since 1435, the estate ensures every harvest reflects the authentic Tuscan heritage of its unique terroir.
How it is produced
The olives are carefully hand-harvested in autumn and swiftly taken to the estate mill. To prevent oxidation, they are crushed within four hours using a continuous knife mill. A precise vacuum cold extraction is then performed at 23 °C, entirely preserving the fresh aromatics and nutritional quality. Afterwards, the oil rests under an inert gas atmosphere at controlled temperatures, guaranteeing optimal stability and a remarkably clean tasting profile.

At Fonterutoli, as well as at Belguardo and Zisola, resides the same philosophy that aims to promote local vine varieties as an expression of the identity of the region, in respect of diversity and nature, via sustainable agriculture and improvements mindfull of the delicate hydro-geologic balance, in order to prevent soil erosion and maximize water reserves in the region. All of this in order to be able to hand the land intact to future generations.
"I like to think to our family tree as a sturdy and generous vine plant because all Mazzei's history is constantly connected to vineyards, cellars and wine." (Marchese Lapo Mazzei, Cavaliere del Lavoro) Read more
