What kind of wine it is
Cabreo La Pietra Chardonnay by Folonari is a still white wine produced in Tuscany that enhances Chardonnay. On the nose, it reveals a rich aromatic profile of exotic fruits, citrus and acacia flowers, complemented by elegant notes of vanilla and honey. On the palate, it offers a creamy texture balanced by pronounced freshness and a pleasant mineral savouriness. The sip is intense, dry and very persistent, with a clear propensity to develop complex tertiary aromas over time.
Where it comes from
The grapes come from the Casa di Sala Estate in Greve in Chianti. The vineyards are located at 450 metres above sea level on sandy soils of schist origin, which impart a typical savoury note to the wine. Historically recognised as the first white Super Tuscan, it expresses excellent aromatic concentration, the result of agronomic management aimed at fully enhancing the unique character of the area.
How it is produced
After manual harvesting and a gentle pressing, the must is cold settled. The vinification involves partial fermentation in toasted French oak barrels, followed by malolactic fermentation. Ageing continues for twelve months in wood with regular bâtonnage to increase smoothness and complexity, then finishes with at least six months of bottle ageing. The result is a structured and elegant white wine.

In 1912, Italo Folonari, Ambrogio Folonari's grandfather, with his brother Francesco, bought the Ruffino winery, known at the time for its characteristically flask-packed Chianti.
After the Second World War, some profound changes took place in Italy in terms of economic development and rising living standards. This trend also influenced the wine sector, where the Folonari family, and Ambrogio in particular, were among the first to promote this trend by producing new, high-quality wines that helped create the 'new frontier' of Italian wine. At the end of the 1960s, the family sold the company 'Fratelli Folonari', which was positioned in the table wine segment, and began to concentrate on bottled wines at origin, thanks also to the acquisition of the famous Tenuta di Nozzole near Greve in Chianti, in the heart of Chianti Classico region. At the same time, they bought other estates in Tuscany with the aim of producing fine wines, including 'Cabreo' conceived by Ambrogio in the 1980s.
In 2000, Ambrogio left Ruffino and the rest of the family and created with his son the: "Ambrogio e Giovanni Folonari Tenute", holding some of the best agricultural properties. This gave rise to a group of companies located in areas with the highest wine-growing vocation in Tuscany. Read more
