What kind of wine it is
Folonari B.S.T. Cabernet Sauvignon Merlot is a still red wine created from a blend of Cabernet Sauvignon and Merlot grapes. Described as a Baby Super Tuscan, it offers a full-bodied and robust profile, balanced by well-integrated tannins. Its deep purple colour introduces a bouquet of blackberry, blueberry and liquorice, complemented by subtle menthol notes. It is ideal when decanted for about an hour and served with meats, cured meats and cheeses or flavourful street food dishes.
Where it comes from
The grapes come from the estate-owned vineyards of Tenute Folonari located in Porrona, at an altitude of three hundred and fifty metres. In this area, the vines benefit from regular ripening, which encourages excellent fruit expression. The clay soil rich in stones supports rows trained with the spurred cordon method, with a density of five thousand vines per hectare. These conditions give the wine a solid structure and a good predisposition for ageing.
How it is produced
The production process involves fermentation in stainless steel to maintain the integrity of the grape varieties, accompanied by maceration on the skins for about four weeks. This is followed by ageing in stainless steel, which preserves the aromatic freshness by avoiding contact with wood. Under the guidance of oenologist Raffaele Orlandini, the wine expresses the essence of Tuscany, achieving maximum flavour harmony between fifteen and eighteen degrees.

In 1912, Italo Folonari, Ambrogio Folonari's grandfather, with his brother Francesco, bought the Ruffino winery, known at the time for its characteristically flask-packed Chianti.
After the Second World War, some profound changes took place in Italy in terms of economic development and rising living standards. This trend also influenced the wine sector, where the Folonari family, and Ambrogio in particular, were among the first to promote this trend by producing new, high-quality wines that helped create the 'new frontier' of Italian wine. At the end of the 1960s, the family sold the company 'Fratelli Folonari', which was positioned in the table wine segment, and began to concentrate on bottled wines at origin, thanks also to the acquisition of the famous Tenuta di Nozzole near Greve in Chianti, in the heart of Chianti Classico region. At the same time, they bought other estates in Tuscany with the aim of producing fine wines, including 'Cabreo' conceived by Ambrogio in the 1980s.
In 2000, Ambrogio left Ruffino and the rest of the family and created with his son the: "Ambrogio e Giovanni Folonari Tenute", holding some of the best agricultural properties. This gave rise to a group of companies located in areas with the highest wine-growing vocation in Tuscany. Read more
