What kind of wine it is
Taif by Cantine Fina is an aromatic white wine made from Zibibbo grapes, an authentic expression of the Sicilian lands. It displays a straw yellow colour with greenish highlights, revealing a broad and well-defined aromatic profile. Intense fruity notes of peach and mandarin emerge, accompanied by fresh hints of sage. On the palate, it is enveloping and mineral, with a pleasant warmth balanced by lively acidity. This balance leads the sip towards a persistent floral finish of rose and wisteria, offering a harmonious experience true to the nature of the grape variety.
Where it comes from
Taif originates in western Sicily, among the hills of Marsala at around three hundred metres above sea level, a microclimate ideal for preserving the aromatic freshness of the grapes. The vines are trained using the vertical trellis system with Guyot pruning. In this region, Zibibbo, also known as Muscat of Alexandria, boasts ancient roots. Although historically linked to sweet wines, here it reveals an extraordinary aptitude for producing dry versions. Meticulous care in the vineyard enhances the integrity of the fruit and the typicality of the Mediterranean soil, resulting in a modern and crystalline interpretation.
How it is produced
The grapes are harvested at the end of August. The winemaking process aims for maximum aromatic precision, using fermentation in stainless steel to preserve the purity of the fruit. Maturation continues in the same containers and is completed with a period of bottle ageing, essential for harmonising the structure without sacrificing freshness. Excellent served chilled, this is an extremely versatile white: it pairs beautifully with seafood starters, light first courses, citrus salads and fresh cheeses, finding its perfect match in a traditional fish couscous.
