What kind of wine it is

El Aziz by Fina is a natural sweet white wine for dessert, a pure expression of the Grillo grape in Sicily. Its aromatic profile releases enveloping scents of dried white fruit, such as pineapple, peach and apricot, intertwined with clear notes of vanilla, honey and sweet spices. On the palate, it is full, rounded and structured, with a pleasant softness balanced by a delicately bitter finish. This sensory profile makes it the ideal pairing for blue cheeses, creamy desserts and fine patisserie creations.

Where it comes from

Production takes place in Marsala, in western Sicily, in vineyards located about two hundred metres above sea level. The El Aziz project was born following a particularly hot season, which triggered a peculiar early ripening. The name, of Arabic origin, means "The Magnificent", recalling the historical layering of the area. The Grillo vines are grown on trellises with Guyot pruning and a density of five thousand five hundred vines per hectare. Such agronomic rigour ensures a strictly limited yield, promoting the highest quality expression.

How it is produced

The production cycle is based on a manual late harvest, usually carried out between the end of September and the beginning of October. The harvest is preceded by a measured on-the-vine drying, an essential step to naturally concentrate the fruit's richness. The subsequent vinification and fermentation stages take place in stainless steel tanks, preserving the grape variety's aromatic precision to the fullest. The process is completed with maturation in the same material and a final six-month rest, which helps to stabilise the structural balance before release to the market.

Served at 10-12°C, this excellent natural sweet wine releases enveloping notes of vanilla and honey. Its smooth alcoholic structure creates a perfect pairing with blue cheeses, particularly gorgonzola.
