The vines grow on a volcanic substrate rich in iron, potassium and magnesium, influenced by the presence of sulphur due to the proximity of an ancient mine. How it is produced
Production begins with a rigorous selection of the bunches, necessary for a variety with thin and delicate skins. Temperature-controlled fermentation takes place in stainless steel tanks to preserve the purity of the primary aromas. Subsequently, the wine undergoes a long maturation in steel on its own lees for twelve months. During this stage, repeated bâtonnage is carried out to resuspend the fine lees, a fundamental technique to enrich the body and structural complexity of the wine.
