Where it comes from
This Campanian expression is born in the heart of Irpinia, within the boundaries of the Greco di Tufo denomination. The vineyards, situated at an altitude between 350 and 700 metres, are spread across the renowned areas of Sorbo Serpico, Taurasi, Tufo and Santa Paolina. The wine’s distinctive character comes directly from the nature of the soils, characterised by gypsum-rich soils and volcanic sandstone formations. This particular geological matrix imparts a recognisable savoury imprint to the vines, while ensuring great freshness and a remarkable gustatory tension that is reflected in the clarity of the final profile.
How it is produced
The production process aims to preserve the aromatic integrity of the fruit. In the winery, the must undergoes cold fermentation in stainless steel tanks, maintaining a controlled temperature to enhance the fresh and mineral notes. Afterwards, the wine is aged on fine lees for about four months, always in steel. This period on the lees increases the structure on the palate without affecting the original acidity. Served chilled, this white proves to be a versatile gastronomic companion, ideal for pairing with raw seafood, sushi, dishes based on white meats and buffalo mozzarella.
