How it is produced
Production begins with a rigorous manual harvest and careful selection of the bunches. Fermentation takes place in steel tanks, followed by a long maceration on the skins, a crucial step to extract colour and structure. After malolactic fermentation, the wine matures for about two years in oak barrels, which help to soften and stabilise the dense tannic structure. A further period of bottle ageing completes the evolution, giving the wine a deep and refined harmony on the palate.
