Description

What kind of wine it is

The Classic Sauvignon by Erste+Neue is a still white wine that faithfully expresses the identity of the grape variety. Produced in the South Tyrol region, it presents a bright straw yellow colour, enhanced by elegant greenish highlights. On the nose, it offers a clear bouquet, characterised by elderflower notes, nettle, tomato leaf and hints of exotic fruit. On the palate, it is pleasantly fruity, supported by pronounced minerality and a vibrant acidity that define its great liveliness.

Where it comes from

The Sauvignon grapes grow in the picturesque mountain landscape of Caldaro, a prime area for quality viticulture. The temperate Alpine climate ensures optimal conditions, encouraging the aromatic development of the grapes and preserving their natural freshness. The vines take root in a gravelly porphyry soil, a geological component that gives the wine a strong mineral character and a distinct savouriness. Cultivated using pergola and Guyot systems, the vineyards benefit from a pedoclimatic context that enhances the grape variety's characteristics.

How it is produced

The winemaking process is aimed at protecting the fragrant primary aromas, avoiding oxidation of the must. Fermentation takes place at a controlled temperature in steel tanks, followed by ageing on fine lees for about four months. This process gives the wine structure and aromatic precision, while maintaining its freshness. Ideal to serve between 8 and 10 °C, it pairs perfectly with tasty starters, vegetarian dishes and, in particular, asparagus-based dishes.

History and Curiosities

The Sauvignon 2025 from the Erste+Neue Classic Line expresses the authenticity of the mountainous territory of Caldaro. This refined Alto Adige DOC benefits from a temperate alpine climate and porphyritic soils, which impart a pronounced minerality. The delicate fermentation in stainless steel at low temperature preserves its aromatic purity, while ageing on fine lees for four months enhances its fresh vegetal notes. Ready to enjoy without the need for decanting, it offers the palate a pleasantly fruity sip, accompanied by a lively, refreshing acidity.

Wines and mountains have a lot in common. They provide us with intense moments, they challenge and fulfil us. Making a good wine is like climbing a summit. It requires hard work, determination, expertise and routine.

ERSTE+NEUE has been exploring new avenues for more than a century, combining Alto Adige wine culture and tradition with innovation. Throughout this journey, we have dared quite a few first ascents and in doing so have written Alto Adige wine history.

Created in 1986 as a result of the merger of Erste Kellerei (1900) and Neue Kellerei (1925) followed in 2016 by the future-oriented alliance with Cantina Kaltern. Today ERSTE+NEUE stands for top alpine wines, pressed in harmony with nature using not only the latest technology but also drawing on the experience and love of experimentation demonstated by previous generations. inery that was rich in both tradition and renown. The clue is in the name: the tried and tested is upheld, while there is an openness to innovation. Each individual bottle is proof of this philosophy.

ERSTE+NEUE has held the FAIR’N GREEN international seal for sustainable viticulture since 2018. This certification supports us not only in making sustainability goals objectively measurable but also in achieving them. The goals of FAIR’N GREEN are also close to our hearts: environmental protection, natural viticulture, promotion of biodiversity and the protection of natural resources. In addition, fair pay, social commitment and social responsibility are required. At the end of the day, the preservation and promotion of the cultural landscape are also important to us. In this way, those who love our alpine wines can enjoy excellent products that have been produced under responsible conditions for both people and nature.
