Erste & Neue Pinot Bianco is a still white wine that highlights the purity of the Pinot Bianco grape variety. The winemaking process involves fermentation in stainless steel tanks at a controlled temperature and in the absence of oxygen, preserving the original aromatic finesse. The subsequent maturation in large wooden barrels for seven months in contact with the lees enriches its structure. On the nose, it offers clear apple aromas and delicate floral nuances. On the palate, it is linear and elegant, supported by a lively mineral freshness that leads to a harmonious and persistent finish, with a slight hint of almond.
Where it comes from
This white wine originates from Alto Adige, in the Caldaro area. The vineyards are located between four hundred and fifty and six hundred metres above sea level, immersed in a temperate alpine climate that encourages balanced ripening and pronounced acidity. The vines take root in calcareous and porphyritic soils of glacial origin, key elements for the wine's savoury profile. The Erste & Neue winery manages its vineyards according to strict ecological standards. The commitment to sustainable and organic viticulture is certified by accreditations aimed at protecting the local ecosystem.
How it is produced
The grapes come from vines cultivated using the guyot and pergola systems, managed to achieve an ideal productive balance. Visually, the wine displays a brilliant pale straw yellow colour with greenish highlights. Its versatility at the table is expressed through a dynamic and clean sip. It pairs excellently with salads, creamy risottos and fresh goat's cheeses. Its pronounced savoury character makes it perfect for accompanying Mediterranean fish dishes and white meats.

Created in 1986 as a result of the merger of Erste Kellerei (1900) and Neue Kellerei (1925) followed in 2016 by the future-oriented alliance with Cantina Kaltern.
