The roots of the old vines, around eighty years old, delve into soils composed of alluvial gravel of glacial origin. The characteristic rounded pebbles ensure optimal drainage, giving an extraordinary concentration of flavour. This unique terroir guarantees the wine a profound and continuous evolution over time, faithfully maintaining its original expression.
How it is produced
The natural approach in the cellar respects the integrity of the fruit. Vinification involves a long whole bunch maceration of eighty days, carried out without extraction processes to preserve the material intact. Fermentation starts spontaneously in concrete vats thanks to indigenous yeasts. Ageing takes place for eighteen months in used barrels, where the wine rests on fine lees. The absence of sulphur until bottling, which is done without filtration or fining, ensures an authentic and unadulterated sip.
