Description

What kind of wine it is

Enrico Serafino Barbera d’Alba Superiore Pajena is a still red wine that embodies the essence of Piedmont. Made from Barbera grapes, it stands out for its intense ruby red colour and well-defined structure. On the palate, it is dry and full-bodied, characterised by vibrant acidity and balanced tannins. It is the ideal companion for roasted red meats, game, and mature cheeses, fully revealing its complexity if allowed to breathe for about an hour before serving.

Where it comes from

This Barbera d’Alba Superiore originates in Canale, in the heart of Roero. Enrico Serafino manages his vineyards according to the principles of organic and sustainable agriculture, safeguarding the integrity of the landscape. The name Pajena, which in the local dialect evokes the cheerfulness of lively chatter, celebrates conviviality at the table. Meticulous care in the vineyard ensures grapes of great purity, capable of expressing the authentic vocation of the Piedmontese soil.

How it is produced

The vinification of Barbera involves a cold pre-fermentation maceration, essential for extracting the most delicate aromatic compounds. Subsequently, ageing takes place in stainless steel tanks, a technical choice aimed at preserving the freshness and integrity of the fruit. On the nose, it opens with fragrant notes of red fruits and ripe grapes, while on the palate it reveals intense hints of cherry, plum, and blackberry. The finish is enhanced by delicate nuances of currant, resulting in a harmonious and persistent wine.

History and Curiosities

Founded in 1878 in Canale d’Alba, the Enrico Serafino winery celebrates the authentic essence of Piedmont. The name Pajena comes from the local dialect and means “to make a racket” or “to chatter”, serving as a true ode to conviviality. This exceptional interpretation of Barbera d’Alba DOC Superiore reflects a deep territorial vocation, born from grapes cultivated according to the strict principles of organic and sustainable agriculture. Under the expert guidance of oenologist Paolo Giacosa, the company combines a centuries-old tradition with a genuine respect for nature.

The Enrico Serafino winery was established in 1878 in Canale d'Alba, in the heart of one of Piedmont's most interesting wine-growing areas, the Roero.

Founded by Serafino Enrico, an entrepreneur and landowner, the winery soon became one of the most important in Piedmont and among the first to spread the region's classic wines throughout Italy and abroad. In addition to the classic Piedmontese wines of the area, first and foremost Roero, Arneis and Barbera, the company produces great Barolo and Barbaresco from grapes from the nearby Langhe, noble and elegant wines in which the Nebbiolo grape variety expresses its characteristics at its best. But Enrico Serafino's pride and joy is the selection signed 'Cantina Maestra', in which the red wines Pasiunà and Parduné stand out, the highest expression of excellence of the Roero territory, and the Metodo Classico Alta Langa DOC sparkling wines.
