Enrico Serafino Alta Langa Brut Oudeis is a refined Traditional Method sparkling wine that embodies the excellence of Piedmontese sparkling winemaking. The result of a blend of Pinot Noir and Chardonnay, it displays a bright straw yellow colour and a fine, persistent perlage. The bouquet is complex and fragrant, with notes of honey, yellow flowers, white-fleshed fruit, yeast and bread crust. On the palate, it stands out for its breadth and savouriness, supported by a lively freshness that leads to a long mineral finish. It is ideal for accompanying starters, cheeses and vegetarian dishes.
Where it comes from
The grapes grow near Canale d’Alba, in the heart of Piedmont. The vineyards of Alta Langa are situated at an average altitude of over four hundred metres, a position that ensures ideal temperature variations to preserve the acidic freshness required for top-quality sparkling wine bases. The unique characteristics of the area are clearly expressed in the glass, giving the wine a pronounced savoury character and a perfect balance between aromatic richness and palate clarity.
How it is produced
Production begins with the selection of grapes on a vibrating table, followed by cooling and gentle whole-bunch pressing in an inert environment. Once fermentation in steel is complete, the musts mature on the lees with periodic bâtonnage. The prise de mousse takes place according to the Traditional Method, with ageing on the lees for forty-two months in historic cellars kept in the dark. The process concludes with disgorgement and the addition of a liqueur d’expédition free from spirits, a choice aimed at preserving the wine’s most authentic and pure expression.

Founded by Serafino Enrico, an entrepreneur and landowner, the winery soon became one of the most important in Piedmont and among the first to spread the region's classic wines throughout Italy and abroad. In addition to the classic Piedmontese wines of the area, first and foremost Roero, Arneis and Barbera, the company produces great Barolo and Barbaresco from grapes from the nearby Langhe, noble and elegant wines in which the Nebbiolo grape variety expresses its characteristics at its best. But Enrico Serafino's pride and joy is the selection signed 'Cantina Maestra', in which the red wines Pasiunà and Parduné stand out, the highest expression of excellence of the Roero territory, and the Metodo Classico Alta Langa DOC sparkling wines.
