Elio Grasso Barolo Gavarini Chiniera is a still red wine produced in Piedmont from Nebbiolo grapes. Where it comes from
This red originates in Monforte d’Alba, within the renowned Gavarini Chiniera cru. The vineyards benefit from a southern exposure and are situated at an altitude between 350 and 400 metres. The vines, trained using the Guyot system and with an average age of around 35 years, take root in a calcareous and sandy soil, moderately loose. This particular composition gives the wine a distinct minerality and a clean aromatic profile. The planting density encourages significant fruit concentration, resulting in a dense texture and an excellently persistent finish.
How it is produced
Production begins with a rigorous manual harvest, usually carried out in the second half of October. In the winery, alcoholic fermentation takes place in temperature-controlled steel tanks, with daily pump-overs essential for extracting colour and structure. Once malolactic fermentation is complete, the wine matures in Slavonian oak barrels, an essential stage for refining the balance of flavours without overpowering the character of the grape variety. Finally, the wine rests in the cellar for about 8-10 months to consolidate its harmony.

In the early 1980s we decided to go back to our origins as grape growers, well aware that our work did not stop at the end of the row of vines. We had no illusions that we were inventing anything: we merely wanted to comply with the best in the traditions and work of our predecessors, without any preconceived ideas.
