Elena Walch Alto Adige Sauvignon represents a pure and elegant expression of the region. Made from Sauvignon grapes, this white stands out for its mineral and refreshing profile. The process begins with the gentle pressing of whole grapes to extract the free-run must, followed by fermentation at a controlled temperature. Maturation in stainless steel gives the palate a slender and elegant structure, with vibrant acidity and a persistent finish.
Where it comes from
The grapes are grown at Castel Ringberg, near Caldaro, in the heart of Alto Adige. The vineyards are situated between three hundred and four hundred metres above sea level, with optimal south-east and south-west exposure that encourages balanced ripening. The deep limestone soils with sandy veins give the wine a pronounced savouriness, while the significant night-time temperature variations are essential for preserving freshness and aromatic finesse.
How it is produced
Hand harvesting ensures only the best bunches are selected. After static clarification, the must ferments in stainless steel to preserve the varietal aromas. The subsequent ageing on fine lees consolidates the wine’s harmony without diminishing its liveliness. In the glass, it appears a bright straw yellow with greenish highlights, revealing a bouquet of ripe gooseberry and elderflower, enriched by hints of papaya and aromatic herbs.
