Pinot Bianco Elena Walch is a still white wine from the Alto Adige appellation made from Pinot Bianco grapes, fermented and aged in stainless steel. To the eye, it is straw yellow with greenish highlights, while on the nose it offers notes of apple, yellow fruit and a slight herbaceous hint. On the palate, it expresses an elegant fullness balanced by distinct mineral notes and vibrant acidity, delivering a persistent freshness.
Where it comes from
Pinot Bianco is grown along the steep slopes of Alto Adige, in a context characterised by a unique microclimate. The vineyards stretch from the milder valley floors up to higher mountain altitudes, where cool alpine currents balance the sun exposure of summer days. The vines are rooted in limestone and porphyry soils, a light geological composition that gives the wine a clear mineral imprint. The suitability of these soils, combined with the purity of the mountain climate, favours the ripening of clusters capable of maintaining an extraordinary aromatic tension.
How it is produced
Production begins with a meticulous hand-picking of the clusters. Soft pressing and static clarification of the must follow, fundamental stages to preserve the aromatic integrity of the raw material. Fermentation takes place in stainless steel at a controlled temperature, a technical choice aimed at enhancing the freshness and primary fruity notes of the Pinot Bianco. The process concludes with careful ageing on the lees in the same steel tanks. This time on the fine lees enriches the structure and bestows a delicate softness, while maintaining a dry and high-precision finish.
