Where it comes from
The grapes come from Vigna Castel Ringberg, a strictly defined single vineyard overlooking the waters of Lake Caldaro. The rows are situated at four hundred metres above sea level on a light sandy soil, predominantly calcareous with a significant presence of clay. This specific pedoclimatic context defines the wine’s aromatic imprint and structural vigour. The area is named after the Renaissance castle built by the Habsburg dynasty in sixteen twenty, a historical memory that highlights the strong vocation of this mountain terroir.
How it is produced
The Elena Walch winery adopts a gentle handling of the grapes, utilising gravity combined with soft destemming and careful transport on rails. Fermentation involves traditional maceration on the skins for twenty days, followed by malolactic fermentation in stainless steel tanks. The wine rests for twenty-four months in new French oak barrels, enriching its profile with measured spicy notes. After blending, the final maturation in the bottle refines the tannin texture and elevates the overall harmony of flavour.
