Beyond The Clouds by Elena Walch is a white wine with the Alto Adige designation, known for its great structure. This blend of white grapes centres around Chardonnay, which is fermented and aged in oak barrels, offering a complex and enveloping tasting experience. In the glass, it reveals intense aromas of white flowers, stone fruit and pineapple, enriched by mineral nuances and a slight toasted note. Its creamy smoothness and fresh savouriness pair perfectly with rich first courses, fish, white meats and characterful cheeses.
Where it comes from
The grapes for this label are grown near Termeno, the result of a careful selection of the best hillside plots at medium altitude. The south-east exposure of the vineyards ensures regular ripening, clearly defining the aromatic profile. The soils are characterised by a rich composition of calcareous dolomitic rocks, interspersed with sandy matrices and rocky layers. This geology imparts a marked savoury note and a distinct Alpine character, combining strength and precision.
How it is produced
The process begins with rigorous vineyard management, where the harvest time is determined by the perfect ripeness of the Chardonnay. All varieties are harvested and processed on the same day to preserve the harmony of the blend. The grapes undergo joint fermentation in French oak barrels, encouraging immediate integration of aromas and structure. The technique of weekly bâtonnage, practised for the following three months, gives the wine a full and enveloping texture. After about ten months in wood, the process concludes with bottle ageing for at least six months, ensuring perfect balance and long persistence.

This masterpiece is born from the estate's finest grapes, showcasing a predominantly Chardonnay blend whose composition varies each year to best enhance every vintage. The elegant ageing in French barriques imparts an incredible smoothness to this oenological icon, celebrated with the Tre Bicchieri award from Gambero Rosso and outstanding scores of up to 98 points from international critics.
