Versante Nord by Eduardo Torres Acosta is a white wine from Sicily, an authentic expression of the Terre Siciliane denomination, vinified with spontaneous fermentation and matured in concrete and old barrels. This blend of local grapes, including Minnella Bianca, Inzolia, Carricante, Catarratto Bianco Comune and Grecanico Dorato, offers a taut and profound profile, characterised by a pronounced mineral imprint. On the palate, it is dynamic, textured and satisfying, providing a perfect gustatory contrast ideal for pairing with cheese or dishes based on lean fish.
Where does it come from
The grapes come from the region of Sicily, specifically from the northern slope of Mount Etna, in historic districts such as Pietramarina, Allegracore and Piano Daini. The vineyards are located at high altitude, between 550 and 930 metres, altitudes that introduce a vibrant and textured sip. The old vines are cultivated using the alberello and double Etnean cordon systems. The terroir, characterised by volcanic ash sands, imparts a marked tension to the fruit. The entire management follows strict organic and sustainable principles, in full respect of the local ecosystem.
How is it produced
The harvest takes place in the last week of September. In the cellar, the grapes undergo a spontaneous fermentation with indigenous yeasts, followed by two days of skin maceration without temperature control. Afterwards, the wine matures in concrete tanks and old barrels, allowing the liquid to harmonise without masking its origin. This artisanal maturation consolidates the structure and balance of the drink, resulting in a white wine with an essential, taut profile, deeply connected to its territory.

The Versante Nord 2024 by Eduardo Torres Acosta originates from old vines that are fifty years old, historically cultivated among the rows of Nerello Mascalese on the northern slope of Etna. Rooted between 550 and 930 metres above sea level on volcanic ash sands, these plants give rise to a white blend with a vibrant mineral character. The artisanal process involves spontaneous fermentations and a two-day skin maceration. Ageing in cement and old barrels preserves its pure territorial expression, celebrated by the 91 points awarded by Decanter.

In 2012, he participated in the grape harvest at Arianna Occhipinti's, and a year later he worked as an oenologist at the Passopisciaro winery, attracted by the volcanic territory. In 2014, he began his work to restore the leased vineyards on Etna's northern slope. In the same year he bottled his first vintage.
Today we work 4.7 ha divided into 9 vineyards at different heights and districts. We continue to recover old vineyards that are 90% cultivated with the traditional alberello system. Today the company believes in the importance of continuous comparison and sharing with other producers, in the knowledge of other territories and other varieties.
