Wine making | The must is protected from contact with oxygen throughout the fermentation process. The grapes are pressed when they arrive at the winery with a 50% yield. Fermentation at 16 7°C follows, and then the wine is transferred to pressurised stainless steel tanks, where the wine is made sparkling using the Martinotti Method. |
