Description
What kind of wine it is
This still white wine from Friuli fully expresses the typical characteristics of the Sauvignon grape variety, presenting a straw yellow colour with greenish highlights. The aromatic profile is delicate and characterised by notes of fresh exotic fruit such as pineapple, enriched with hints of peach and herbal nuances of sage. On the palate, it is elegant, with a velvety texture, excellent structure and remarkable drinkability. Ideal served chilled, it pairs perfectly with fish dishes and cheese selections.
Where it comes from
The grapes are grown in Cormons, in the heart of the Collio, a renowned wine-producing area in Friuli-Venezia Giulia where the Doro Princic winery operates. The vines take root in the characteristic marl soil, a geological matrix essential for enhancing clear aromas and ensuring a harmonious taste structure. This specific hilly environment offers the vines optimal growing conditions, resulting in a distinct territorial identity and a strong capacity for ageing in the glass.
How it is produced
The process begins with the manual harvesting of the grape bunches during the coolest hours of the morning, followed by gentle pressing. Only the free-run must is extracted, which, after an initial racking, ferments in temperature-controlled tanks to ensure maximum aromatic precision. The wine then undergoes a slow ageing on fine lees for at least eight months; a crucial step in developing its smooth texture and complete structural balance.
History and Curiosities
Produced in Cormons by the Doro Princic winery, founded in 1960, this Collio DOC Sauvignon embodies the utmost elegance of Friuli-Venezia Giulia. The oenologist Alessandro Princic oversees every detail, cultivating the vines on a particularly suitable marl soil and harvesting the grapes by hand during the coolest hours. The exclusive use of free-run must and the patient ageing for eight months on fine lees give the wine a velvety structure and an excellent longevity of 5-10 years, capable of enhancing over time the authentic aromas of this fine artisanal label.
