Domini Veneti's Appassimento Rosso Veneto Passito is a dry red wine with a typical geographical indication from Veneto, produced using the drying technique from a structured blend of Corvina Veronese, Corvinone Veronese, and Rondinella grapes. In the glass, it presents an intense ruby colour with garnet reflections, releasing notes of ripe cherry, plum, vanilla, and black pepper. On the palate, it is full and velvety, supported by soft tannins that accompany a long, spicy finish. It is ideal for pairing with lasagne, fresh pasta dishes, and mature cheeses.
Origin
The grapes come from the vineyards of Negrar, in Valpolicella, a territory that guarantees excellent ripening conditions. The vines grow at an altitude of between one hundred and three hundred and fifty metres on clay and limestone soils, which lend roundness and balance to the sip. Agronomic management involves the use of the Veronese pergoletta, a training system ideal for protecting the integrity of native varieties and enhancing their vegetative vigour.
How it is produced
The process begins with manual harvesting and the drying of the grapes for sixty days, a fundamental technique for concentrating aromas and structure. The must macerates for ten days with scheduled punching down. Full malolactic fermentation gives the wine stability and a pleasant softness. The production cycle concludes with careful ageing in oak barrels for at least six months, an essential phase for defining its rich aromatic profile.

The Marco Polo Collection by Domini Veneti celebrates the fascinating encounter between West and East, drawing inspiration from the famous travels of the explorer. This historical tribute is also reflected in the artistic label, which skilfully combines mythological and historical elements, horses, and architectural motifs, and is completed by an elegant capsule decorated with a dragon motif.
